Preheat the oven to 180°C (top/bottom heat). Line a baking tray with parchment paper.
Next, finely grate the apples. If they are very juicy, lightly squeeze out the grated apples.
In a large bowl, mix together the grated apples, oats, egg, cinnamon, baking powder, and honey (or maple syrup) until a moldable dough forms.
Shape the cookies: Using your hands, form small cookies (about 5 cm in diameter) and place them on the prepared baking tray.
Bake the cookies in the preheated oven for 15–20 minutes until golden brown.
Then remove from the oven, let them cool completely, and enjoy your apple cookies — perfect as a healthy snack or to take on the go!
